General FAQs
A: Yes. All NOMOSU products are high in fiber, low in carbohydrates, and are either sugar-free (free of both sucrose and fructose) or very low (<5g/100g) in naturally occurring sugars (such as lactose in milk). See this section on Sugar for more information.
A: Yes. NOMOSU products are low carb due to their fiber content and lack of sugar (sucrose, fructose). The combination of ingredients leads to a product with a low glycemic load. Important: remember that fructose does not have a high glycemic index however, so glycemic load is not the only criterion to consider. Look for sugar-free or very-low-sugar foods that are high in fiber.
A: NOMOSU goes to great lengths to carefully select our ingredients and suppliers meticulously. We wish to eat food that has been grown organically, without the use of pesticides. Careful sourcing of high-quality ingredients is essential for delicious taste and contributes to human and environmental ecological health.
A: Yes, NOMOSU crafts its taste award winning chocolate from carefully selected organic cacao beans to final bar.
A: Fiber may be the most undervalued ‘macronutrient’, and many people lack fiber in their diets. Fiber is essential for intestinal health and intestinal health is key for overall health. Soluble and insoluble fiber help to promote a healthy diverse intestinal microbiome and digestive and intestinal barrier function. In addition to natural fiber in cacao, we include prebiotic fiber such as inulin from the agave plant. Inulin is a prebiotic fiber that helps to shift the balance of the microbiome towards beneficial Bifidobacteria and Lactobacilli. It also encourages satiety and healthy suppression of appetite. Meanwhile, it is about balance and using too much fiber can cause discomfort if one is not used to it, so the dose is moderated to make you feel well, while enhancing your microbiome health.
Does eating non-nutritive (non-caloric) sweeteners of any kind lead to the body ‘thinking’ it will get sugar and does this then have adverse health consequences when the body does not ‘get’ the energy it is expecting?
Not in the case of stevia extract, monk fruit extract, erythritol or allulose. While non-nutritive sweet ingredients (includes natural sweet ingredients and synthetic) share two aspects in common – sweet taste and no calories – that is where the similarities end. One must look at each sweet ingredient’s metabolic pathway and biochemistry. There is a cephalic response that is stimulated even when you think about food, regardless of whether it is sweet or not. Even if there were evidence to support this theory, it would not apply to food products, because they do contain nutrients and energy in the form of healthy protein, fats and carbohydrate, so the body does ‘get’ energy from them. This question is more relevant to ask regarding zero-calorie sweetened drinks. Even in that case, the body of evidence demonstrating the health benefits of sweet ingredients such as stevia are significant. See Ingredients section for more information.

Why did you choose virgin stevia instead of other natural sweet ingredients like monk fruit?
We will always be open-minded to any ingredients that we feel support human health and help to create delicious tastes. After analyzing the copious research on stevia, it is clear that it is a health-supporting plant with medicinal properties. However, we found that the stevia forms on the market had funny aftertastes. This changed when we came across the world’s only virgin stevia leaf extract, purified physically with membranes and only water, from start to finish, resulting in an extract that tastes smooth and sweet, with no strange aftertastes. All other stevia suppliers purify chemically, altering the sweet molecules’ shape, their interaction with cell taste receptors, and creating aftertastes. Combined in the right recipe, our virgin stevia powered sweet mix enables sugar-like taste while supporting metabolic health.
A: Fruit is healthy to consume in moderation. Berries (e.g. wild blueberries, strawberries, blackberries, raspberries) are particularly micronutrient-dense and low in fructose (sugar) whereas ripe bananas and grapes are lower in fiber while being high in fructose (sugar). Guidelines such as 7 portions of fruit and veg a day should specify that most of those should be vegetables, in particular greens.
A: All NOMOSU dark chocolates and Almond Butter chocolate are vegan. The A2 milk chocolates are vegetarian.
A: NOMOSU has carefully selected cacao from organic plantations in Ecuador and Haiti. We have tested dozens of single origin cacao, including different varieties (e.g. Criollo, Forastero, Trinitario). We combined single origins and chose this specific 2-origin blend because of the beautiful flavors, and as having a blend creates a consistently delicious taste. NOMOSU also pays for premium cacao that is priced above market prices, based on a system of transparent trade, where all prices in the chain are transparent and farmers are paid a premium. When it comes to cacao, NOMOSU’s priorities are delicious taste and ecological biodiversity, which go hand in hand.
